Hygroscopic substances attract molecules of water from their surrounding environment through absorption or adsorption. Adsorption is the sticking of the water molecules to the substance. Freeze drying is a dehydration process. The wet material is frozen to a temperature between minus fifty degrees to minus eighty degrees Celsius. Pressure is reduced and enough heat is added to allow the frozen water particles to evaporate.
